Baked Macaroni & Cheese
Italian Style




1 medium Onion, chopped
2/3 cup Vegetable or Chicken Stock
1 oz. Butter
3 T. Flour
1/4 cup Milk
Handful of Grated Cheddar Cheese as desired
1 t. Mustard
16 oz. Macaroni or Shell noodles
2-3 Firm Tomatoes, sliced
1 T. Basil
2 T. Parmesan Cheese, grated
Salt & Pepper

Put Onion and Stock into a frying pan and bring to a boil, stirring and cook for 5--6 minutes.
Put the Butter, Flour, Milk, and Seasonings into a pan and whisk together over heat until thickened and smooth.
Remove from heat and add the cheeses, mustard and Onions.
Cook the Pasta according to the package directions, and drain thoroughly and stir into the sauce.
Transfer to a baking dish.
Layer on the Tomatoes and sprinkle with basil and Parmesan Cheese.
Broil to lightly brown the Cheese on top.
