Breakfast Potatoes




4 Large Red Potatoes scrubbed, sliced
2 Slices Onion, chopped
2 Tablespoons Butter
1 Tablespoon Adobo (must have - found in Spanish foods section)
1 Tablespoon Parmesan Cheese
Salt & Pepper to taste
Paprika


In a large skillet sauté the Onions in the Butter until clear.
Add the Potato Slices, arranging them in a layer.
Add Salt, Pepper, Adobo, and sprinkle with Paprika.
Add just enough water to almost cover Potatoes, cover & steam for 10 minutes adding just a bit of water if evaporated before Potatoes are done.
Turn Potatoes and cook on the other side for another 10 minutes allowing water to evaporate only when Potatoes are finished cooking.
Sprinkle with Parmesan Cheese & serve hot.
