Vietnamese Chicken Pho Soup
This is not just a soup, it's an experience!
3 Celery Stalks, thinly sliced 3 Scallions, sliced into rings 10-oz. Cooked Chicken shredded or cut into thin strips 8 oz. Thick Cellophane Noodles or Rice Noodles 3 3/4 Cups Chicken Stock 2 Pieces Light Wood Ear Fungus or 8 White Button Mushrooms sliced
Mix the Celery & Scallions and place in a small bowl on the coffee table. Follow cooking directions for Noodles, strain, and place in separate bowl on the coffee table. Place the cooked Shredded Chicken in yet an additional separate bowl on the coffee table. Bring the Chicken Stock to a simmer and add the Mushrooms, pour into a large serving bowl and place on the coffee table.
Each person gets a bowl, spoon & chop sticks. Seat your guests on the floor around the coffee table and take turns getting a bit of each of the greens, shredded chicken, and noodles and places them into their dinner bowl, and the host ladles on the stock.
Keep a bottle of soy sauce on the table for guests.
This is delicious, and just plain fun!
