Clams in Garlic Sauce over Perfect Pasta
1 Red Pepper, cleaned and sliced 1 Tomato, cleaned and sliced 1/2 Onion, sliced into 1/2 rings 1 Dozen fresh Clams, steamed 1 Clove Garlic, crushed. 1 Tablespoon Butter 1 Tablespoon Olive Oil 1/4 Cup Chicken Broth Salt & Pepper Parsley 1/2 Box Spaghetti Noodles, cooked to package directions exactly 2 Tablespoons Butter 2 Tablespoons Olive Oil Parmesan Cheese
A note about cooking perfect pasta. Salt and Oil the water and bring to a full boil before adding the paste. Do not interrupt the full boil while cooking pasta. Fallow package directions exactly. Do not over cook. That's it! Easy!
Cook Pasta al' dante first, according to package directions, then drain. While still warm, mix with 2 Tablespoons Olive Oil and 2 Tablespoons melted Butter, sprinkle with Parmesan, Salt & Pepper, and set aside.
Sauté Onion, Garlic and Red Pepper in 1 Tablespoon Butter and 1 Tablespoon Olive Oil 2 minutes. Add Chicken Broth and bring to a simmer. Add Steamed Clams and Tomatoes to just warm them. Remove Garlic chunk and discard. Pour over Pasta, and sprinkle with Parsley. Top with a bit more Parmesan.
