Middle Eastern Falafel
1 Box Falafel Mix
1 + 1/4 C. Water
Oil for frying
1/2 Head Lettuce, shredded
2 fresh Tomaotes, sliced
Cucumber, sliced
Tahini Sauce or Tahini Butter (available at health food stores, or see recipe below)
Pita Breads, cut in halves
Mix Falafel mix & Water in a bowl, stir well.
Let stand 15 minutes
Roll mixture into 1" balls, then press flat into a patty shape
Pour enough cooking Oil into a deep frying pan to attain 1/2 inch
Heat to hot, and brown each Falafel patty on both sides, remove to paper towels to drain.
(For crunchier Falafel's you can fry a little longer)
Cut each Falafel patty in half and place 2 to 3 halves into each Pita Pocket
Tuck in Tomatoe, Lettuce, & Cucumber
Top with Tahini and serve
Home made Tahini Sauce:
Blend; 1 c Sesame Tahini, 1/2 c Water, 1/2 c Lemon Juice, 3 cloves Garlic minced, and 1/2 t. Salt.
