Mexican Sausage & Rice
This recipe bites back!




1 T. Cooking Oil
6 Mild Sausage Links
1 c. Pickled Jalepeno Pepper slices, strained & chopped
1 lg. Onion, chopped
2 T. Adobo seasoning (available in the ethnic foods isle)
3 c. Water
1+1/2 c. White Rice
3 c. shredded Mexican Cheese blend

In a large skillet, bring the Oil to hot.
Add the Sausage Links, and brown all sides on medium heat (not too hot to burn the skins)
Remove the Sausages from the pan, and set aside to cool.
Put the Onions and the Peppers in the pan, & sautee' until Onions are tender (about 5 minutes)
Meanwhile, cut the Sausages ( in a large bowl to reserve the juices) into bite sized slices.
Add the Rice, and stir constantly for about 3 minutes to coat the Rice in the Oil.
Put the Sausage & Juices back into the pan, and stir to incorporate.
Add Water, and Adobo, and bring to a boil, stirring.
Reduce heat, cover pan, and steam for 20 minutes.

Serve Hot, in a large serving bowl, topped with the Cheese.
