South Western Omelet
3 Eggs
3 T. Milk
1/2 C. Salsa
1/2 C. Shredded Mexican Cheeses
1/2 C. Cooked Chopped Ham or Cooked Crumbled Bacon
2 T. Sour Cream
Scramble the Eggs & Milk together in a bowl.
In a frying pan, bring cooking oil to hot.
Pour in Egg mixture and reduce heat to medium low.
Top with all other ingredients except Sour Cream.
Place a lid over the pan, and simmer about 4 minutes, or until the eggs form small bubbles on the top.
With a spatula, fold over 1/2 of the egg, enclosing the stuffing ingredients.
Remove Omelet to a plate, and top with the Sour Cream
More Cheese and Salsa can be added to the top as well if desired.
