Thai Stir Fried Rice
with Chicken, Shrimp, or Pork




3 Tbs. Peanut Oil
7 oz. skinned & boned Chicken, cut in 1/2 inch slices
1 Tbs. chopped Garlic
1 medium Onion, sliced
2 Eggs
1+1/2 lb. cooked Rice, cooled
2 tsp. White Soy Sauce
2 tsp. Fish Sauce
1 tsp. Sugar
1 tsp. ground White Pepper
Cucumber slices
2 Scallions chopped

Heat the Oil in a wok or saute' pan.
Add the Chicken & Garlic, heat while stirring for 1 minute.
Add the Onion and cook & stir a minute more.
Mix Eggs well in a seperate bowl, then stir into Rice.
Add the rest of the Ingredients, except for Cucumber and Scallions.
Stir, cooking for 2 minutes
Serve immediately, with Cucumber Slices, and Whole Scallions.
