Vietnamese Egg Fried Rice
Basic Stir Fried Rice
2 Tbsp. Peanut Oil
2 Tbsp. Water
2 Eggs
2 Scallions, sliced
1+1/2 lbs. Plain White Rice,
boiled & cooled
2 Tbsp. Soy Sauce
1/2 tsp. Sugar
Beat the Eggs with the Water in a Bowl.
Heat 1/2 teaspoon Oil in a wok or saute' pan, and add the Egg mixture, swirling it around to make an omelet.
Transfer to a plate, and allow to cool. When cool, cut into strips.
Heat the remaining Oil, add the Scallions and stir fry for 2 minutes.
Add the Rice and Egg strips.
Stir in the Soy Sauce, Salt, and Sugar, and cook for 2 to 3 minutes.
Serve in a large bowl.
